Hello friends. Today I have a delicious and quick recipe for fall. This pumpkin spice granola, is perfect for those gloomy fall mornings. I also had some fun
playing with the lighting and making the picture a little moody.

It just goes to show you how the internet sometimes is just an illusion.
Recently hubby has discovered his love for granola and I thought pumpkin spice granola would make a nice flavour for fall. He’s not keen on pumpkin spice but
he seemed to enjoyed this one.
I added some pecan halves to the mix and some pumpkin seeds for a little more crunch.
Ingredients:
4 cups rolled oats
1/2 cup cup pumpkin seeds or raw pepitas
1/2 cup pecan (optional)
1/2 heaping cup unsweetened flaked coconut
1/2 cup pumpkin puree
3/4 teaspoon pumpkin spice
3/4 teaspoon cinnamon
1 cup coconut oil
1 cup
1/3 teaspoon salt
Method:
1. Preheat oven to 350 F
2.Mix oats, nuts, spices, sugar and salt in a large bowl.
3. In a small pan, warm the oil, maple syrup and pumpkin puree and mix well.
4. Pour liquid over dry ingredients and mix with a wooden spoon.
5. Spread mixture evenly onto baking sheets (as needed)
6. Bake for 15 minutes, stir and place back into oven for an extra 10-15 mins.
7. Remove from oven once granola is golden brown (this may vary and you have to keep an close eye) allow to cool completely.
8. One cooled down, place in airtight container.
Serve with yogurt, milk or ice cream 🙂

Looks like a wonderful recipe. However, I do not see the amounts for sugar and maple syrup in the ingredients list. It does say “1 cup” and nothing following……….
