This salad contains several super foods.
– Spinach, which is one of the healthiest of all the leafy and green vegetables loaded with folate, carotenoids and antioxidant properties.
– Radishes contain folates, vitamin B-6, riboflavin, thiamin and minerals such as iron, magnesium, copper and calcium.
– Edaname seeds which are edible, green, immature soybeans. In just a half-cup serving, you get 11g of complete protein and it contains all of the essential amino acids.
Salad
2 cups of baby fresh baby spinach
3 radishes thinly sliced
1/4 cup of shelled edaname seeds
Creamy Vegan Avocado Dill Dressing [makes 1 cup or 16 tablespoons]
1/2 cup avocado (about 1/2 of a large avocado)
1/2 cup greek yogurt
1/2 cup of almond or skim milk to dilute if too thick1/4 red onion chopped
1/2 teaspoon sea salt
1/4 teaspoon fresh dill4 tablespoon freshly squeezed lemon juice
pepper to taste
Place ingredients in food processor or blender and mix until smooth. If you find the consistency too thick for dressing, slowly add almond or skim milk to dilute until desired consistency is achieved.
Adding avocado to a salad increases the body’s ability to absorb healthy carotenoids (like lycopene and beta-carotene) from spinach, lettuce, tomatoes and carrots. For those of you who are not avocado fans, the taste of the avocado is muted by the onion and the lime juice, so fear not.
